Ingredients

  • 16 oz. package Nutter Butters or similar peanut butter sandwich cookies
  • 4 oz. cream cheese softened
  • ¾ cup creamy peanut butter
  • 16 oz. melting chocolate
  • Optional: sprinkles or chopped peanuts

Instructions

  1. Place the 16 oz. package of Nutter Butters (or similar peanut butter sandwich cookies) into a food processor. Pulse until they are transformed into fine, uniform crumbs.
  2. Add the 4 oz. of softened cream cheese and the ¾ cup of creamy peanut butter to the food processor with the cookie crumbs. Process the mixture until it comes together and forms a cohesive dough. It may initially appear a little crumbly, but it should hold together easily when rolled into a ball. If the mixture is too dry and doesn’t hold its shape, add a tablespoon more peanut butter at a time, processing after each addition, until the desired consistency is reached.
  3. Use a small cookie scoop (about 1 tablespoon capacity) to portion out the cookie mixture. Roll each portion into a smooth ball between your palms and place it on a cookie sheet lined with wax paper or parchment paper. Continue this process until all of the mixture has been rolled into individual truffles.
  4. Place the cookie sheet with the formed truffles into the freezer and chill for at least 30 minutes. This step is crucial for firming up the truffles, which helps them maintain their shape during the dipping process.
  5. While the truffles are chilling, melt the 16 oz. of melting chocolate. The best method for a smooth melt is using a double boiler, or you can use a microwave at 30-second intervals, stirring in between. Once the chocolate is smooth and melted, carefully roll each chilled cookie ball in the melted chocolate, ensuring it’s fully coated. Lift with a fork, allowing excess chocolate to drip off, then place it back on the wax paper-lined cookie sheet. If desired, quickly top with chopped nuts or sprinkles before the chocolate sets. Continue until all truffles are dipped and decorated.
  6. Allow the chocolate coating to set up completely at room temperature or in the refrigerator before carefully transferring the Nutter Butter Balls to an airtight container for storage.
