The Inspiration Behind This Family Favorite
This delightful recipe actually began its journey in my mother-in-law’s kitchen. During a lively discussion about beloved casserole dishes, she mentioned a pork chop and potato creation that her family had recently enjoyed. My culinary curiosity was immediately piqued, and I eagerly requested the recipe.
Upon reviewing her version, I quickly realized that while delicious, it might not be an instant hit with my own discerning family. My son, “Little Dude,” wasn’t particularly fond of O’Brien potatoes, and neither of my boys were enthusiastic about cream of celery soup. But giving up on a promising concept simply isn’t my style! I saw the potential, the core of a fantastic meal, and knew I could adapt it to suit our family’s tastes.
And so, I embarked on a delicious transformation! I took the fundamental idea from her recipe and cleverly fused it with one of our all-time favorite side dishes: rich, creamy cheesy potatoes. With a few simple substitutions, the best elements of both worlds converged into a single, magnificent meal. The result was an immediate success, earning its place in our regular dinner rotation. This Cheesy Pork Chop and Potato Casserole is now a cherished staple, proving that a little creativity can turn a good idea into a truly great one.

Tips & Tricks for a Perfect Pork Chop Casserole
Achieving the perfect Cheesy Pork Chop and Potato Casserole is easier than you think with these helpful tips:
- Choosing Your Pork Chops: We have a strong preference for bone-in pork chops in this recipe. The bone adds an incredible depth of flavor that really permeates the casserole as it bakes. For a dish with multiple components like this, where the pan will be quite full, I generally recommend selecting chops that are approximately 3/4 of an inch thick. If you’re grilling, you might go even thicker, but this measurement works best for even cooking in a casserole.
- Arranging Chops in the Pan: If your pork chops are generously sized, you might find yourself needing to overlap them slightly in the baking pan to make them fit. This is perfectly acceptable. However, try to minimize the overlap as much as possible to ensure even cooking. For particularly large chops or a fuller batch, consider using a lasagna pan instead of a standard 9×13-inch pan. A larger surface area allows more of the meat to be exposed to the heat, promoting a consistent cook. Trust your best judgment based on the size and cut of pork chops you choose.
- Potato Variations: While shredded hash browns create a wonderful texture, don’t hesitate to use cubed potatoes if that’s what you have on hand or prefer. For an extra layer of flavor and texture, and if your family enjoys them, opt for O’Brien potatoes, which come with diced onions and peppers.
- Cheese, Please!: This recipe is incredibly adaptable to different cheese preferences. Colby Jack offers a fantastic melt and mild, creamy flavor, but feel free to experiment! Sharp cheddar, Monterey Jack, a Mexican blend, or even a smoky provolone would be absolutely delicious in this casserole, adding your unique twist.

Do you have to brown pork chops before baking?
Browning the pork chops before they go into the oven isn’t strictly necessary, but it’s a step we highly recommend. Searing the pork chops in a skillet beforehand creates a beautiful crust and locks in a deeper, richer flavor, enhancing the overall taste of your casserole. We genuinely believe the slight extra effort and time are well worth the delicious results. However, if you’re truly pressed for time, feel free to skip this step without compromising the fundamental deliciousness of the dish.
