Ingredients

  • 1 onion
  • 1 green pepper
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2½ cups water
  • ½ lb pasta
  • 1 cup corn (frozen, canned or fresh)
  • 1 cup salsa
  • 15 oz can black beans (rinsed and drained)
  • 1½ cups shredded cheese (jack, cheddar or your favorite)
  • optional: extra salsa, cheese, sour cream, cilantro, green onions etc. for serving

Instructions

  1. Chop 1 onion and 1 green pepper.
  2. In a large skillet that has a lid, brown 1 lb ground beef seasoned with a bit of salt and pepper. As the beef is finishing, add the onion and green pepper until the onions start to get translucent. Add 1 packet taco seasoning and stir to combine.
  3. Add ½ lb pasta, 1 cup corn, 15 oz can black beans, 1 cup salsa and 2½ cups water. Bring to a boil and then reduce to a simmer.
  4. Cover and simmer for 20-25 minutes, stirring occasionally. If it starts to look dry, add a bit more water.
  5. When the pasta is cooked, remove from heat and stir in 1½ cups shredded cheese.
