Essential Tips for a Perfect No-Bake Orange Creamsicle Cheesecake

Achieving a flawless no-bake cheesecake is simpler than you might think, especially with a few helpful tips:

  • **Protect Your Fridge:** When chilling, it’s a good idea to place your springform pan on a plate or a baking sheet. Ladyfingers, after being dipped in orange juice, can sometimes release a little liquid, especially if your springform pan isn’t perfectly sealed. Catching any potential drips on a plate is far easier to clean than the entire refrigerator shelf!
  • **Layering with Care:** For distinct, beautiful layers, pour the cooled orange pudding mixture over the vanilla cheesecake filling gently and slowly. If you pour too quickly or with too much force, the layers might swirl together, creating a less defined appearance. An overly enthusiastic pour might result in a dip in the center, as shown in some photos. A steady hand ensures a picture-perfect presentation.
  • **The Power of Chilling:** Patience is key with any no-bake cheesecake. Give your Orange Creamsicle Cheesecake ample time to set up completely in the refrigerator. While it will still be delicious if rushed, allowing it to chill for at least an hour, and preferably several, ensures it is firm enough to slice cleanly and maintain its beautiful shape. A well-chilled cheesecake is not only easier to serve but also boasts a superior texture and refreshing quality.
  • **Ingredient Quality Matters:** Using high-quality cream cheese and heavy cream will make a noticeable difference in the richness and texture of your cheesecake filling. Ensure your cream cheese is properly softened to avoid lumps and achieve a smooth, velvety consistency.
  • **Ladyfinger Alternative:** If ladyfingers aren’t readily available or you prefer a different crust, a simple graham cracker crust makes an excellent substitute. Crush graham crackers and mix with melted butter and a touch of sugar for a classic base.
  • **Serving Temperature:** This cheesecake is unequivocally best served cold. The chill enhances the refreshing citrus notes and maintains the structural integrity of the creamy filling and firm pudding layer.

If you are looking for a fun summer dessert, you are in the right place. This no bake cheesecake has layers of vanilla and orange in a pretty lady finger crust. It looks great and tastes even better!

Prep: 20 mins | Cook: 15 mins | Additional Time: 2 hrs | Total: 2 hrs 35 mins

Equipment

  • 9-inch Nonstick Springform Pan
  • KitchenAid 5-Qt. Stand Mixer

Ingredients

Orange Pudding

  • 2 Tablespoons cornstarch
  • ½ cup granulated sugar
  • 1¾ cup whole milk
  • 4 Tablespoons frozen orange juice concentrate
  • 2 Tablespoons butter

Ladyfinger Crust

  • 7 oz ladyfinger cookies (the crunchy kind)
  • 2 cups orange juice

No Bake Cheesecake

  • 16 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • 1 Tablespoon vanilla extract
  • 2 cups heavy cream (cold)

Instructions

Orange Pudding

  1. In a large (preferably heavy bottomed) saucepan, whisk together the sugar and corn starch. Add a tablespoon or two of cold milk and whisk until smooth. Slowly add remaining milk, whisking as you go so that there aren’t any lumps.
  2. Bring to boil over medium heat, stirring constantly. Continue stirring for a minute or two. The pudding should be thick enough to coat the back of a spoon.
  3. Stir in the orange juice concentrate and butter. Allow to cool for about 20 minutes, then refrigerate until ready to use.

Crust

  1. Break each lady finger so that they are about the height of your 8″ springform pan.
  2. Dip each piece of lady finger into orange juice. Place the lady finger, sugar side out, around the springform pan. Use the short pieces to hold them up. It’s okay if the bottom isn’t a solid crust; just do your best to spread it out evenly and make the outside sturdy, spreading out any remaining pieces for the bottom.

Cheesecake Filling

  1. Beat the cream cheese until smooth. Add the sugar and vanilla extract and continue beating on high for a couple of minutes until well combined and airy.
  2. Get the cold heavy cream from the refrigerator and gradually drizzle it into the cream cheese mixture while the mixer is still on high.
  3. Once the cream is completely added, continue to beat until the mixture is smooth, creamy, airy, and stiff enough to hold firm peaks.

Assembly

  1. Spoon the finished cream cheese mixture into the prepared ladyfinger crust and spread it smooth. Be sure to leave enough room at the top for the orange pudding layer.
  2. Carefully spread the cooled orange pudding over the vanilla cream cheese mixture.
  3. Place the cheesecake in the refrigerator. Chill for at least an hour, but preferably several hours (or overnight) before serving, to ensure it is perfectly set.
  4. Serve cold for the best experience.

Notes

If you don’t want to use ladyfingers for the crust, a traditional graham cracker crust can be easily substituted for a different texture.
