The beauty of baked oatmeal lies in its adaptability. We’ve explored countless variations, from vibrant fruit-infused recipes to autumnal pumpkin spiced delights and even rich chocolate creations. Each version offers a unique experience, proving just how dynamic this humble grain can be. This time, however, we sought to venture into a slightly different, more indulgent, yet still wholesome, territory. And so, we proudly present our Pecan Pie Baked Oatmeal – a recipe that marries the best of breakfast with the irresistible charm of a classic dessert.

Typically, when crafting baked oatmeal, our aim is to achieve a light and fluffy texture, one that’s tender and almost pudding-like, yet robust enough to be cut into neat servings. This consistency is wonderful for many flavors, providing a delicate mouthfeel that melts in your mouth. However, to truly capture the essence of a traditional pecan pie, a different approach was necessary. Pecan pie is renowned for its rich, dense, and slightly gooey filling, a far cry from a light and airy oatmeal bake. To replicate this lusciousness, we strategically adjusted the ingredient ratios for this particular recipe.

Our Pecan Pie Baked Oatmeal incorporates a few more eggs than our standard baked oatmeal recipes. This addition is key to achieving that desired richness and a more substantial, custardy texture that mimics the authentic feel of pecan pie filling. The extra eggs contribute to a denser, more cohesive structure, providing a satisfying chew that perfectly complements the crunch of the pecans. Despite this indulgent texture, we’ve carefully balanced the recipe with a generous amount of wholesome old-fashioned oatmeal and a dollop of creamy plain yogurt. The oats contribute essential fiber and sustained energy, while the yogurt adds a touch of tang and boosts the protein content, ensuring you get a nourishing meal that satisfies without the guilt. It’s a culinary triumph where both your taste buds and your well-being are celebrated.

Looking back, it’s surprising that this delightful combination wasn’t explored sooner. The marriage of hearty oatmeal with the sweet, buttery, and incredibly nutty flavors of classic pecan pie is, frankly, a match made in culinary heaven. The natural earthiness of oats provides a perfect canvas for the rich brown sugar, vanilla, and toasted pecans to shine, creating a symphony of flavors that is both familiar and exciting. This recipe isn’t just about recreating a flavor; it’s about elevating breakfast to an experience. It’s about indulging in a taste you love while still fueling your body with quality ingredients.

If you’ve been searching for a breakfast option that delivers the deliciousness of your favorite dessert without compromising your healthy eating goals, then this Pecan Pie Baked Oatmeal is precisely what you need. It’s a truly comforting, satisfying, and wholesome dish that brings a touch of indulgence to your morning routine. Whether you’re planning a cozy weekend brunch or need a convenient make-ahead meal for busy weekdays, this recipe delivers on all fronts.

Ingredients

  • 4 eggs
  • ¾ cup light brown sugar packed
  • 2 cups old fashioned oatmeal
  • ¾ cup milk
  • ½ cup plain yogurt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 cup pecans

Instructions

  • Preheat oven to 350°F (175°C) and generously grease a deep dish pie pan or an 8×8 inch square baking dish.
  • In a large mixing bowl, beat the 4 eggs until they are uniform in color and slightly frothy.
    4 eggs
  • Add the light brown sugar, old fashioned oatmeal, milk, plain yogurt, vanilla extract, and baking soda to the beaten eggs. Stir well until all ingredients are thoroughly combined and the mixture is smooth.
¾ cup light brown sugar, 2 cups old fashioned oatmeal, ¾ cup milk, ½ cup plain yogurt, 1 teaspoon vanilla extract, ½ teaspoon baking soda
  • Pour the oatmeal mixture into the prepared baking dish. Carefully arrange the 1 cup of pecans evenly over the top of the mixture. This will create a beautiful, classic pecan pie appearance as it bakes.
    1 cup pecans
  • Bake for 35-40 minutes, or until the center is set and a toothpick inserted comes out mostly clean. The top should be golden brown and the pecans lightly toasted.
  • Allow the baked oatmeal to cool for a few minutes after removing it from the oven. This helps it set further and makes for easier slicing.
  • Serve warm for the most comforting experience, or at room temperature. It’s delicious on its own or with a drizzle of maple syrup, a dollop of whipped cream, or a scoop of vanilla ice cream if you’re feeling extra indulgent!
