Ingredients

Salad

  • 1 head iceberg lettuce
  • 1 red onion
  • 1 cucumber
  • 1 large tomato
  • 8 oz shredded cheese cheddar, co-jack or a mexican blend would be good
  • 14.5 oz can pork and beans drained
  • 9.25 oz bag Frito chips
  • Optional: 1 pound ground beef & 1 packet taco seasoning

Catalina Dressing

  • ½ cup vinegar
  • ½ cup olive oil
  • ¾ cup ketchup
  • ½ cup granulated sugar
  • ½ teaspoon paprika
  • ½ teaspoon onion powder

Instructions

  • Combine all the dressing ingredients in a mason jar. Shake well to combine and place in the fridge until ready to use.
    ½ cup vinegar, ½ cup olive oil, ¾ cup ketchup, ½ cup granulated sugar, ½ teaspoon paprika, ½ teaspoon onion powder
  • If using taco meat: brown ground beef in a skillet, then add taco seasoning according to package directions. Set aside to cool until ready to use.
    Optional: 1 pound ground beef & 1 packet taco seasoning
  • Chop all of your vegetables (lettuce, red onion, cucumber, tomato) and arrange them in a large serving bowl. Top with shredded cheese and gently mix the vegetables and cheese.

  • Refrigerate the vegetable and cheese mixture until ready to serve. Just before serving, add the drained pork and beans, the cooled taco meat (if using), and the Frito chips. Toss everything with the homemade Catalina dressing until well combined.
    14.5 oz can pork and beans, 9.25 oz bag Frito chips
  • Serve immediately after adding the chips and dressing to ensure the Fritos remain perfectly crunchy.
