Why Choose the Instant Pot for Tuscan Chicken Pasta?

The Instant Pot isn’t just a kitchen gadget; it’s a game-changer for dishes like creamy Tuscan chicken pasta. Its pressure cooking capabilities drastically reduce cooking time, allowing you to achieve tender chicken and perfectly cooked pasta in a fraction of the time it would take on the stovetop. The sealed environment of the Instant Pot also ensures that all the incredible flavors meld together beautifully, creating a more intense and harmonious sauce. Plus, the one-pot nature of this recipe means minimal cleanup – a huge win on busy evenings!

Beyond speed, the Instant Pot excels at creating depth of flavor. By pressure cooking all the core ingredients together, the chicken absorbs the aromatic essence of garlic, Italian seasoning, and chicken stock, while the pasta cooks directly in the flavorful liquid, infusing every strand with savory goodness. This results in a dish that tastes like it simmered for hours, even though it was ready in minutes. It’s the ultimate tool for achieving maximum flavor with minimal effort.

Expert Tips for Perfect Instant Pot Tuscan Chicken Pasta

Achieving restaurant-quality Tuscan chicken pasta in your Instant Pot is easier than you think. Here are some essential tips to ensure your dish turns out perfectly every time, packed with flavor and creamy goodness.

Prepare Your Chicken for Even Cooking

Always cut your boneless, skinless chicken breast into uniform, bite-sized pieces before adding it to the pressure cooker. This crucial step ensures that the chicken cooks quickly and evenly alongside the pasta, preventing any dry or undercooked spots. Plus, it makes for much easier eating – no need for extra cutting at the table!

Maximize Flavor with Herbs and Seasonings

While fresh herbs make a beautiful garnish, dried herbs are your best friend for convenience and robust flavor in this recipe. Italian seasoning, with its blend of oregano, basil, thyme, and rosemary, provides a classic Tuscan base. For an extra layer of depth, don’t shy away from minced garlic and a touch of Dijon mustard; they add a subtle tang that brightens the entire dish. If you have fresh basil on hand, a sprinkle just before serving will elevate the aroma and visual appeal.

Achieve Your Desired Sauce Consistency

After the pressure cooking cycle, the sauce might seem a little thin. For a thicker, more luxurious sauce, simply use the “Sauté” function on your Instant Pot for a few minutes. Allow the mixture to gently simmer, stirring frequently to prevent sticking or burning. The sauce will naturally reduce and thicken to a rich, velvety consistency, coating every piece of pasta and chicken beautifully.

Cheese Choices for Ultimate Creaminess

Freshly grated Parmesan cheese is highly recommended for its superior flavor and melting qualities, contributing significantly to the dish’s creaminess. However, don’t hesitate to experiment with what you have or prefer. Pre-shredded Parmesan will work in a pinch, though it might contain anti-caking agents that slightly alter the texture. For a different, equally delicious twist, consider Pecorino Romano for a sharper, saltier kick, or Asiago for a milder, nutty profile. The key is to add the cheese at the end, allowing the residual heat to melt it into the sauce without overcooking.

Pasta Perfection: Choosing the Right Shape

While penne pasta is a classic choice for its ability to capture and hold creamy sauces, feel free to experiment with other pasta shapes. Rigatoni, cavatappi, or even orecchiette are excellent alternatives, as their nooks and crannies are perfect for clinging to the luscious Tuscan sauce. Just ensure the pasta type you choose has a similar cooking time to penne under pressure, or adjust accordingly to prevent it from becoming mushy. The goal is an al dente bite that complements the tender chicken and rich sauce.

Boost Your Veggies

This recipe is incredibly versatile when it comes to adding more vegetables. Diced carrots, bell peppers, or zucchini can be added along with the chicken and pasta for extra nutrients and color. These vegetables will cook perfectly under pressure. You can also substitute or add other leafy greens for spinach; baby kale, Swiss chard, or even finely chopped regular kale would be delicious.

If you opt for tougher greens like mature kale, it’s best to add them at the same time as the chicken and pasta. This provides sufficient cooking time under pressure to soften them down and allow them to wilt into the sauce, integrating their flavor and nutrients seamlessly. For softer greens like baby spinach, adding them after pressure cooking allows them to gently wilt from the residual heat, maintaining their fresh texture and vibrant color.

No Instant Pot? No Problem! Cook it on the Stovetop

Even without an Instant Pot, you can still enjoy this delightful creamy Tuscan chicken pasta as a one-pot meal. Simply use a large, heavy-bottomed pot or Dutch oven with a tight-fitting lid. Begin by browning the chicken in a little olive oil, then add the garlic, sun-dried tomatoes, tomato paste, and seasonings, stirring for a minute until fragrant. Pour in the chicken stock and bring it to a boil. Add the uncooked pasta, ensuring it’s mostly submerged in the liquid. Cover the pot and reduce the heat to a simmer, cooking until the pasta is al dente and the chicken is thoroughly cooked, stirring occasionally to prevent sticking. You may need to add a splash more broth or water if the pasta absorbs liquid too quickly. Once cooked, remove from heat and stir in the spinach, heavy cream, and Parmesan cheese, allowing the residual heat to melt the cheese and wilt the spinach. Serve immediately and savor the flavors!

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 3 teaspoons minced garlic
  • 1 teaspoon Dijon mustard
  • ½ cup sliced sun-dried tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 cups chicken stock
  • 2 cups penne pasta uncooked
  • 5 ounces baby spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • optional: fresh basil for garnish

Instructions

  • Cut 1 pound boneless, skinless chicken breast into uniform bite-sized pieces.
  • Combine the cubed chicken, 3 teaspoons minced garlic, 1 teaspoon Dijon mustard, ½ cup sliced sun-dried tomatoes, 2 tablespoons tomato paste, 2 teaspoons Italian seasoning, ½ teaspoon salt, and ½ teaspoon ground black pepper into your Instant Pot. Pour in the 4 cups chicken stock and stir gently to combine all ingredients.
  • Carefully add the 2 cups uncooked penne pasta on top of the mixture. Gently press the pasta down with a spoon to ensure all of it, along with the chicken, is submerged in the chicken stock. This prevents dry pasta.
  • Put the lid securely on the pressure cooker, ensuring the valve is set to the “Sealing” position. Cook on high pressure for 5 minutes.
  • Once cooking is complete, perform a quick pressure release. To minimize any starchy splatter, you can cover the vent with a damp cloth or kitchen towel as the steam releases.
  • Carefully open the lid. Add the 5 ounces baby spinach, 1 cup heavy cream, and 1 cup grated Parmesan cheese to the pot. Stir thoroughly until all ingredients are well combined, the cheese has melted into the creamy sauce, and the spinach has completely wilted. You can place the lid back on the pot for a few minutes to help the residual heat melt the cheese and wilt the spinach further.
  • Serve your delicious Instant Pot Creamy Tuscan Chicken Pasta immediately. Garnish with additional grated Parmesan cheese, a pinch of red pepper flakes for a subtle kick, and fresh basil leaves if desired. Enjoy!

Notes

Storage: Store any leftover Creamy Tuscan Chicken Pasta in an airtight container in the refrigerator for up to 4 days. For longer storage, it can be frozen for up to 3 months. When reheating, a splash of milk or chicken stock can help restore the sauce’s creaminess.
