There’s a special kind of magic inherent in a Jell-O poke cake. The way the colorful, flavorful gelatin seeps into the nooks and crannies of a tender cake creates a stunning marbled effect, turning a simple dessert into a visual masterpiece. Beyond its aesthetic appeal, this technique infuses the cake with an unparalleled moistness and an extra layer of flavor that plain cakes simply can’t achieve. Our Cranberry Poke Cake takes this concept to new heights, leveraging the festive and zesty essence of cranberries to create a truly memorable treat.
What sets this particular recipe apart is its generous and satisfying thickness, offering a substantial slice that truly feels indulgent. Cranberries are not just an afterthought here; they are woven into the very fabric of the dessert, appearing both within the luscious frosting and as the star flavor of the Jell-O. This dual-cranberry approach ensures a rich, authentic taste that balances sweetness with a delightful tartness, making every bite a complex and rewarding experience.
Beginning with readily available cake mixes, this recipe simplifies the baking process without compromising on quality or flavor. This convenience, combined with the fact that it can be prepared well in advance, makes the Cranberry Poke Cake an absolute lifesaver for busy hosts, especially during festive seasons. Imagine the ease of having a show-stopping dessert ready and waiting, allowing you more time to enjoy your guests and the meal itself.

This dessert strikes a perfect balance between classic charm and modern convenience. It evokes a nostalgic feeling, reminiscent of grandmother’s homemade treats, yet its vibrant appearance and straightforward preparation keep it feeling fresh, relevant, and utterly fabulous. It’s like a delicious nod to the past, updated for today’s palates and busy lifestyles, making it a fitting centerpiece for any celebratory spread.
It almost feels like the cake version of a frosted cranberry Jell-O salad, but with the added decadence of a moist cake. This unique blend of textures and flavors makes it a highly anticipated addition to any holiday table, promising both comfort and an exciting twist on traditional offerings.
Crafting Your Cranberry Poke Cake: A Step-by-Step Guide
Embarking on the creation of this stunning Cranberry Poke Cake begins with a smart shortcut that ensures a consistently tender and tall cake: using two standard cake mixes. While it might sound like a lot, this approach guarantees a wonderfully substantial dessert, especially when baked in a deep 9×13 inch pan, allowing ample space for the cake to rise and for the Jell-O to truly permeate every layer. This method is perfect for feeding a crowd and offers a satisfyingly generous slice.
Should you prefer a smaller cake, perhaps for a more intimate gathering, simply adjust the recipe by using one cake mix and halving the quantities of the remaining liquid ingredients (eggs, oil, milk, and water). This flexibility ensures that whether you’re hosting a grand holiday feast or a cozy dinner, you can tailor the cake to your needs without sacrificing its signature taste or texture.

The magic truly happens once the cake emerges from the oven, golden and fragrant. This is when you perform the “poke” in poke cake. Using the handle of a wooden spoon or a similar blunt object, gently create evenly spaced holes across the entire surface of the warm cake. These perforations are crucial, acting as conduits for the liquid Jell-O to seep deep into the cake, creating those beautiful, eye-catching stripes and infusing it with flavor and moisture. Remember to not poke all the way through, just a little over halfway down, to ensure the Jell-O stays within the cake’s structure.
Cranberry Jell-O, with its distinctive tartness and festive color, is the preferred choice for this recipe. However, it can sometimes be a seasonal item or harder to find. In such instances, raspberry Jell-O makes an excellent and equally delicious substitute. Its slightly different but complementary berry flavor will still create a wonderful contrast with the sweet cake and cranberry frosting, maintaining the vibrant appeal of the dessert.
Once the Jell-O has had sufficient time to set within the cake, creating its signature marbling and moist texture, it’s time to crown your creation with the simplest yet most delectable frosting. This two-ingredient wonder requires just a can of whole cranberry sauce and a tub of Cool Whip. Gently break up the cranberry sauce with a fork until it reaches a desired consistency, then fold it into the Cool Whip. The result is a light, airy, and wonderfully tangy frosting that perfectly complements the cake’s flavors.

This frosting, while incredibly simple to prepare, delivers a burst of flavor that truly elevates the cake. For those who enjoy a bit of textural contrast, consider stirring in some lightly toasted chopped pecans or walnuts. The nutty crunch adds another dimension, enhancing the overall experience. Finally, chill your beautifully frosted cake until it’s ready to be served, allowing all the flavors to meld and the cake to firm up perfectly. Then, prepare to enjoy every last, glorious bite!
Storing, Freezing, and Making Ahead for Ultimate Convenience
The Cranberry Poke Cake isn’t just delicious; it’s also a masterclass in make-ahead desserts, offering incredible flexibility for your entertaining schedule. Its flavors deepen and meld beautifully with time, making it an ideal candidate for preparing in advance. You can bake the cake and infuse it with Jell-O a day or two before your event, keeping it covered and refrigerated. This allows the gelatin to fully set and the flavors to truly penetrate, resulting in a more integrated and delicious dessert.
The frosting is equally convenient, taking only a few minutes to whip up. It can also be prepared and applied to the cake a day in advance without any issues. This advanced preparation capability is a true game-changer, allowing you to tackle dessert responsibilities well before guests arrive. Imagine the relief of having your show-stopping centerpiece ready and waiting, freeing you to focus on other meal preparations or simply relax and enjoy the occasion.
- Does it need to be refrigerated? Absolutely. Due to the gelatin component and the creamy frosting, this dessert is best served chilled. Refrigeration is crucial for the Jell-O to properly set within the cake. Always ensure the cake is covered to prevent it from drying out and store it in the refrigerator until you’re ready to serve. Leftovers should also be promptly covered and returned to the fridge to maintain their freshness and safety.
- Can you freeze it? Yes, you can! Freezing is a fantastic option for longer storage, but with a small caveat: it’s best to freeze the unfrosted cake. To do so, wrap the cooled, Jell-O-infused cake tightly with plastic wrap, then place it in a freezer-safe bag or an airtight container. It can be stored in the freezer for up to one month. When you’re ready to enjoy it, simply thaw the cake in the refrigerator and then apply the freshly made cranberry Cool Whip frosting. This method ensures the frosting retains its light, airy texture and doesn’t become watery upon thawing.

Cranberry Poke Cake
Ingredients
- 2 white cake mixes 15.25 ounces each
- 6 large eggs
- 1 cup vegetable oil
- 1 cup water
- 1 cup whole milk
- 3 oz box cranberry Jell-O
- 1 cup boiling water
- 15 oz can whole berry cranberry sauce
- 8 oz Cool Whip
Instructions
-
Preheat the oven to 325℉ and spray a deep 9×13 cake pan with nonstick cooking spray. Set aside.
-
In a large mixing bowl, combine the two cake mixes, eggs, oil, milk, and water. Using a hand mixer or stand mixer, beat until no lumps appear. It will seem thin, but this is what you want.2 white cake mixes, 6 large eggs, 1 cup vegetable oil, 1 cup water, 1 cup whole milk
-
Pour into your prepared cake pan and bake for 50-60 minutes or until a toothpick inserted into the middle of the cake (deeper than just the top bit of cake) comes out clean. Let cool for about 20 minutes.
-
With the handle of a wooden spoon, or with a similarly shaped object, poke holes in the cake. There should be a hole about every inch and be careful to not go all the way through the cake. Just go a little over halfway down.
-
Stir the jello powder into the boiling water until dissolved.3 oz box cranberry Jell-O, 1 cup boiling water
-
Slowly pour the jello over the top of the cake, first covering the holes and then any surface of the cake left after that.
-
Cover the cake and refrigerate for at least 4 hours or until the jello is set.
-
Put the cranberry sauce in a medium mixing bowl and use a fork or other utensil to break it up until no large chunks remain and it resembles a homemade style cranberry sauce.15 oz can whole berry cranberry sauce
-
Add the cool whip to the bowl with the cranberry sauce and fold it together until fully combined.8 oz Cool Whip
-
Frost the top of the cake with the mixture. Refrigerate until ready to serve and store any leftovers in the refrigerator.
Notes
- Store the cake covered in the fridge, for up to 5 days. Freeze without frosting in an airtight container for up to 3 months. Frost when ready to serve.
- If you like more frosting, double the frosting recipe.
- If you can’t find cranberry Jell-O, raspberry is a good substitute.
- Don’t try to speed up the bake time by increasing the temperature. A thick cake like this does better lower and slower.
- If you don’t want to make such a thick cake, you can use just one cake mix and cut the ingredients that go in the mix in half. Bake at 350℉ and start checking the cake around 20-30 minutes.
