Ingredients

Pie

  • 1 pie crust
  • 1½ pounds carrots
  • 2 Tablespoons butter
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • 2 eggs
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • ¾ cups milk
  • 1 Tablespoon all purpose flour

Cinnamon Streusel

  • ½ cup all purpose flour
  • ¼ cup light brown sugar packed
  • ¼ cup butter
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 375 °F.
  2. Prepare pie crust and place in 9-inch deep dish pie plate. Refrigerate until ready to use.
  3. Clean and peel carrots. Cut into slices or small chunks.
  4. Put the carrots in a saucepan with a cup of water. Cover and boil for about 10-12 minutes or until soft. Drain the water from the carrots.
  5. Puree carrots until smooth. Add in some milk if necessary to achieve a smooth consistency.
  6. Stir the butter into the carrots until melted.
  7. Add remaining filling ingredients (granulated sugar, light brown sugar, eggs, ground cinnamon, ground ginger, vanilla extract, milk, all purpose flour) and mix until combined.
  8. Put the filling in the prepared crust and bake for 25 minutes.
  9. While the pie is baking, stir together the streusel flour, brown sugar, and cinnamon. Cut in the butter until the mixture is crumbly.
  10. After the first 25 minutes of baking, remove the pie from the oven and reduce the heat to 350°F. Sprinkle streusel mix over the pie and bake for an additional 25-35 minutes. Cover the crust if it starts to get a little bit dark to prevent over-browning.
