  • 3 cups rhubarb diced
  • cups granulated sugar divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 Tablespoons butter cold, cut into pieces
  • 1 large egg beaten

Instructions 

  • Lightly butter an 8×8-inch baking pan. Preheat your oven to 350°F (175°C). 
  • In a medium bowl, combine the diced rhubarb with 1 cup of granulated sugar. Stir well to coat the rhubarb. Spread this mixture evenly into the bottom of the prepared baking pan.
    3 cups diced rhubarb
  • In a separate bowl, whisk together the all-purpose flour, the remaining ¾ cup of granulated sugar, baking powder, and salt until thoroughly combined.

  • Add the cold, cut butter to the flour mixture. Use a pastry blender, two knives, or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs. Pour in the beaten egg and mix until just combined and a crumbly dough forms. Sprinkle this crumbly topping evenly over the rhubarb layer in the pan. Bake for 40-50 minutes, or until the topping is golden brown and the rhubarb is tender and bubbly.
    4 Tablespoons butter, 1 large egg
