There are pies, and then there are *pies*. This isn’t just any fruit pie; it’s a celebration of luscious berries and a truly groundbreaking crust that will change the way you think about homemade pastry. If you’re a connoisseur of rich, fruity desserts, get ready to discover your new favorite: our spectacular Cherry Berry Pie.

What makes this pie truly stand out is not just its abundant, jewel-toned filling, but also its surprisingly simple and incredibly effective homemade crust. We’ve packed it with a delightful blend of sweet and tart cherries, juicy blueberries, vibrant raspberries, and succulent strawberries. Each bite offers a harmonious explosion of flavor, perfectly balanced and ready to satisfy your deepest dessert cravings.

A Symphony of Berries: Crafting the Perfect Filling

The heart of this extraordinary pie lies in its incredibly rich and flavorful filling. We use a frozen cherry berry blend that typically includes a generous mix of sweet cherries, tart cherries, blueberries, raspberries, and strawberries. This combination ensures a complex flavor profile that hits all the right notes – a delightful dance between tangy and sweet that tantalizes your taste buds.

Using a pre-mixed frozen blend offers incredible convenience, allowing you to enjoy this delicious pie any time of year, regardless of berry seasonality. However, if you have access to fresh berries, feel free to create your own bespoke blend! Simply wash and pit your cherries, gently rinse other berries, and ensure they are well-drained before mixing. Whether fresh or frozen (and defrosted), the key is to use high-quality fruit that will shine through in every bite.

The Secret to a Perfectly Thick Filling: Instant Tapioca

No one wants a runny pie, and that’s where instant tapioca comes in as our unsung hero. This magical ingredient works wonders to thicken the fruit filling, ensuring it holds its shape beautifully even when served warm. Unlike some other thickeners that can give a cloudy appearance or a slightly starchy mouthfeel, instant tapioca creates a clear, glossy, and perfectly set filling that enhances the natural vibrance of the berries.

The benefit of using tapioca is its ability to absorb the juices released by the fruit during baking, creating a luscious, spoonable consistency without becoming overly firm or gelatinous. This means you can confidently serve slices of this pie straight from the oven (after a brief cooling period, of course!) without worrying about a messy collapse. For optimal results, allow the fruit and tapioca mixture to sit for about 15 minutes before filling the pie crust, giving the tapioca time to begin absorbing the fruit juices.

The Unexpected Star: Our Foolproof Pie Crust

While the berry filling is undeniably delicious, what truly elevates this Cherry Berry Pie to legendary status is its unique, foolproof crust. This isn’t your grandma’s traditional pie crust – unless your grandma was a secret culinary innovator! Our recipe incorporates two rather unusual ingredients for pie pastry: baking powder and an egg.

You might be raising an eyebrow, thinking, “Baking powder and an egg in a pie crust? Won’t that make it taste like a cookie or a cake?” It’s a valid question, and one we hear often. But rest assured, the results are nothing short of remarkable. Far from yielding a cake-like texture, these additions surprisingly *enhance* the flakiness of the crust while providing an incredible amount of structure and ease of handling.

Why Baking Powder and an Egg?

The baking powder in the crust provides a subtle lift, contributing to a lighter, airier texture that almost melts in your mouth. It helps create those coveted flaky layers without making the crust crumbly or difficult to manage. The egg, on the other hand, acts as a binder, adding richness and elasticity to the dough. This makes the pastry incredibly pliable and easy to roll out without tearing, even for novice bakers. It also contributes to a beautiful golden-brown finish on your baked pie, making it as appealing to the eye as it is to the palate.

This “foolproof” crust truly lives up to its name. It’s forgiving, handles beautifully, and bakes into a crisp, tender shell that perfectly complements the juicy berry filling. If you’ve ever struggled with pie crusts, this recipe is a game-changer and we highly encourage you to give it a try!

Alternative Crust Options for Every Baker

While we wholeheartedly recommend experimenting with our unique crust, we understand that sometimes you just want to stick with what you know and love. If you’re hesitant to stray from traditional methods, or simply have a favorite recipe you swear by, feel free to use it! Some fantastic alternatives include a classic lard pie crust for unparalleled flakiness and rich flavor, or an extra flaky pie crust recipe that delivers layers of buttery goodness. The beauty of baking is the freedom to customize, so choose the crust that makes you feel most confident in the kitchen.

Serving Suggestions: Elevate Your Pie Experience

A slice of this Cherry Berry Pie is undeniably magnificent on its own, a perfect end to any meal or a delightful afternoon treat. However, if you’re looking to truly “gild the lily” and transform it into an indulgent dessert, there are countless ways to enhance the experience.

The ultimate indulgence: a warm slice of cherry berry pie crowned with a generous scoop of creamy vanilla ice cream.

Our top recommendation is a generous scoop of classic vanilla ice cream. The cold, creamy sweetness of the ice cream provides a wonderful contrast to the warm, fruity filling, creating a dessert symphony that’s hard to resist. Beyond vanilla, consider other complementary flavors like almond, cinnamon, or even a subtle berry sorbet for an extra fruity kick.

For those who prefer whipped cream, you have a world of delicious options! A dollop of homemade maple whipped cream adds a touch of cozy sweetness, while honey whipped cream offers a delicate floral note. Feeling particularly fancy? Pipe on some cream cheese whipped cream for a richer, tangier counterpoint to the sweet berries. A dusting of powdered sugar or a sprig of fresh mint can also add a beautiful finishing touch to your plated dessert.

Signature that says Enjoy! Carlee.

This yummy cherry berry pie is filled with so much yummy fruit. You can use your favorite crust, but we really like the foolproof crust with a few surprising ingredients that make it extra easy to work with.

Prep Time: 20 mins

Cook Time: 1 hr 10 mins

Total Time: 1 hr 30 mins

Equipment

  • OXO Non-stick Rolling Pin
  • Pyrex 9-1/2-Inch Scalloped Pie Plate

Ingredients

Crust

  • 3 cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, cut into small cubes
  • 1 large egg
  • 6 Tablespoons cold water
  • 1 teaspoon vinegar

Filling

  • 1½ cups granulated sugar
  • 4 Tablespoons quick cooking tapioca
  • 4 cups cherry and berry mix, fresh or defrosted frozen
  • 1 teaspoon lemon juice
  • 1 Tablespoon butter for dotting over the filling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine 1½ cups granulated sugar and 4 Tablespoons quick cooking tapioca.
  3. Add the 4 cups cherry and berry mix and 1 teaspoon lemon juice. Toss to coat and let stand for 15 minutes while you prepare the pie dough.
  4. In a separate bowl, combine 3 cups all-purpose flour, 2 teaspoons granulated sugar, 1½ teaspoon salt, and ½ teaspoon baking powder.
  5. Cut in 1 cup unsalted butter (cut into small cubes) until the mixture resembles coarse crumbs.
  6. In a small bowl, combine 1 large egg, 6 Tablespoons cold water, and 1 teaspoon vinegar. Slowly add this liquid mixture to the flour mixture, tossing with a fork until a cohesive ball of dough forms.
  7. Divide the dough in half.
  8. Lightly flour your work surface and roll out one portion of the dough to fit your 9-inch pie plate. Carefully place the pastry into the pie plate and trim the edges even with the rim.
  9. Spoon the prepared fruit filling into the pastry-lined pie plate. Dot the top of the filling with 1 Tablespoon of butter.
  10. Roll out the remaining pastry to create the top crust. Place it over the filling. Trim any excess, then seal and crimp the edges of the top and bottom crusts together to create a decorative finish. Cut several slits in the top pastry to allow steam to escape during baking.
  11. If desired, use any dough scraps to create decorative cutouts (like leaves or stars). Brush the back of the cutouts with a little water and gently press them onto the top crust before baking.
  12. Loosely cover the edges of the pie with aluminum foil or a pie shield to prevent over-browning. Place the pie in the preheated oven and immediately reduce the heat to 350°F (175°C). Bake for 60 to 70 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Cool the pie on a wire rack to allow the filling to set completely. Store any leftovers in the refrigerator.
