Ingredients

  • 3 pounds boneless skinless chicken thighs
  • 15 oz canned full-fat coconut milk
  • ⅓ cup light brown sugar
  • ¼ cup soy sauce
  • 1 Tablespoon curry powder
  • 2 teaspoons cumin
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 large lime (zest and juice)

Instructions

  1. In a large bowl or a sturdy Ziploc bag, combine the 15 oz canned coconut milk, ¼ cup soy sauce, ⅓ cup light brown sugar, 1 Tablespoon curry powder, 2 teaspoons cumin, ½ teaspoon salt, ½ teaspoon ground black pepper, and 1 teaspoon garlic powder. Whisk or shake until all ingredients are well combined and the sugar is dissolved.

  2. Grate the zest from the lime directly into the marinade mixture. Then, cut the lime in half and squeeze in all the juice. Stir to incorporate.

  3. Add the 3 pounds of boneless, skinless chicken thighs to the marinade. Ensure that each piece of chicken is thoroughly coated. For best results, massage the marinade into the chicken gently.
