Ending a wonderful meal with a touch of sweetness can elevate the entire dining experience. This Italian-style cornmeal pudding is not only incredibly easy to prepare but also promises that “something special” factor without demanding hours in the kitchen. Its delicate sweetness and creamy texture make it a delightful alternative to heavier desserts, especially when paired with a bright, fruity topping.

While the blueberry marmellata sauce provides a stunning complement to the budino, its versatility means you can effortlessly swap it for any other fruit or dessert sauce you prefer. This adaptability ensures that your dessert always feels fresh and exciting, adding a “wow” factor to your meal without ever feeling excessive.

The concept of a cornmeal pudding, particularly a polenta-based budino, was a revelation. I discovered this culinary gem through a fantastic recipe shared by The Frugal Hausfrau, and it immediately sparked inspiration. As someone who constantly enjoys exploring new dessert ideas, this was an exciting find. What made it even more appealing was the potential to adapt the recipe using ingredients readily available in my pantry. There’s a certain joy and immense satisfaction in creating something extraordinary without the need for an extra trip to the grocery store.

You prepare it, chill it in the refrigerator, and it’s ready to serve whenever you desire. No oven required, no last-minute scrambling over a hot stove – making it my absolute favorite kind of dessert, especially for summer entertaining. The moment I discovered how effortlessly this budino could be created, I knew it had to become a staple in my recipe collection!

The Delightful Charm of Cornmeal Budino: What It Tastes Like

At its heart, budino is a sophisticated Italian pudding, often made with cornmeal or polenta. If you enjoy puddings with a pleasant textural element, like classic tapioca pudding or a comforting rice pudding, you’re already halfway to understanding the appeal of budino. While the texture of cornmeal is distinct from those, it offers a similarly delightful mouthfeel – a gentle grittiness that adds character to its otherwise creamy consistency.

My husband perfectly captured its essence, describing it as a “sweet and creamy malt-o-meal.” It hits just the right notes of sweetness and creaminess, firmly placing it in the realm of dessert rather than a breakfast porridge. The subtle sweetness of the cornmeal base provides a beautiful canvas for the vibrant flavors of the accompanying sauce.

Crafting the Perfect Blueberry Marmellata: A Burst of Flavor

The blueberry marmellata is essentially a quick, homemade blueberry sauce, transformed into a richer, more concentrated form. When served cold, it boasts a thick, syrupy texture that clings beautifully to the smooth budino, delivering an explosion of fresh fruit flavor with every bite. The tang of the blueberries provides a delightful contrast to the sweet creaminess of the cornmeal pudding. Together, these two components create a harmonious and truly exceptional dessert that’s both comforting and elegant.

Elevating Your Dining Experience with Budino

This cornmeal budino with blueberry sauce is more than just a dessert; it’s an experience. It serves as the perfect grand finale to a robust Italian meal, regardless of the season. Its lightness ensures that diners feel satisfied, not overly full, allowing them to truly savor the flavors. Beyond Italian cuisine, it’s an impeccably elegant dessert for an al fresco dining experience, especially on warm summer evenings. Imagine the gentle breeze, the soft glow of twilight, and this exquisite, chilled pudding gracing your table. It’s just that little something sweet—not too heavy, yet utterly satisfying—tying the entire meal together with a delightful, creamy, blueberry-kissed bow, sending you off to sweet dreams.

  • Stainless Steel 2 qt saucepan
  • JoyJolt 4-Piece Afina Cocktail Glasses Set, Martini Glasses- 8-Ounces

Ingredients

Budino

  • ½ cup polenta or cornmeal
  • ⅓ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 pinch salt
  • 1 Tablespoon butter
  • 1 egg
  • ¼ cup heavy cream or whole milk

Marmellata

  • 2 cups blueberries
  • ¾ cup granulated sugar
  • 1 Tablespoon lemon juice
  • 1 pinch salt

Instructions

Budino

  1. In a large saucepan, bring two cups of water to a boil. Gradually add ½ cup polenta or cornmeal while vigorously whisking. Continue to whisk until smooth.
  2. Reduce heat to low and continue to cook and whisk until thickened; this should just take a few minutes.
  3. Stir in ⅓ cup granulated sugar, ¼ cup light brown sugar, and 1 pinch salt. Keep cooking over low heat and stirring frequently until the mixture thickens again and the cornmeal is softened. This only took me about 15 minutes, but polenta may take as much as 25.
  4. Remove from heat and whisk in 1 Tablespoon butter.
  5. In a small bowl, mix together 1 egg and ¼ cup heavy cream or whole milk. Vigorously beat the egg mixture into the hot cornmeal mixture. Spoon into serving dishes. Press plastic wrap directly onto the surface of the pudding and refrigerate until ready to serve.

Marmellata

  1. Bring 1½ cups of the blueberries, ¾ cup granulated sugar, 1 Tablespoon lemon juice, and 1 pinch salt to a boil over medium heat, stirring frequently. Immediately reduce heat to low and continue to cook, simmer, and stir until berries are popped and the mixture is thickened. This should take about 10 minutes.
  2. Stir in the remaining ½ cup of blueberries. Remove from heat, cover, and chill.

Serving

  1. To serve, stir budino to loosen it. Spoon into serving dishes. Top with blueberry marmellata and serve chilled.
