  • ¾ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spread the 5½ cups old fashioned oats evenly on a rimmed sheet pan and bake for approximately 12 minutes, stirring halfway through to ensure even toasting. Set aside to cool completely.
  3. Line a 9×13 inch (23×33 cm) baking pan with plastic wrap, leaving enough overhang on the sides to easily lift the bars out later.
  4. In a large saucepan over medium heat, melt the ½ cup butter, ⅔ cup light brown sugar, and ⅔ cup honey together. Bring the mixture to a gentle boil, then immediately remove from heat.
  5. Stir in the 2 teaspoons vanilla extract and the cooled, toasted oatmeal until thoroughly combined.
  6. Gently fold in the 1 cup crushed Oreos and ¾ cup chocolate chips until evenly distributed throughout the mixture.
  7. Spoon the granola mixture into the plastic wrap-lined pan. Place another sheet of plastic wrap directly over the top of the mixture. Use the bottom of a sturdy bowl or a measuring cup to apply significant pressure across the entire surface of the bars. Don’t hesitate to really push down; this crucial step helps compact the mixture, ensuring your bars hold together beautifully when cut.
  8. Chill the bars in the refrigerator for at least one hour (or longer for a firmer set). Once chilled, use the plastic wrap overhang to easily lift the entire block of granola from the pan.
  9. Place the granola block on a cutting board and slice into your desired bar size. Store the cut bars in an airtight container at room temperature for up to a week, or extend their freshness by storing them in the refrigerator for even longer. For convenience, you can also wrap them individually.
