Each bite delivers a subtle whisper of refreshing peppermint, complemented by a sweet, rich buttery flavor that perfectly bridges the gap between delightfully crunchy and exquisitely melt-in-your-mouth tender. These cookies aren’t just a treat; they’re an experience, promising to be a star on any holiday dessert table or a comforting indulgence on a chilly evening.

Frostbite Cookies are a symphony of textures and flavors designed to impress. The inclusion of crisp cornflakes and hearty oatmeal ensures a wonderfully satisfying bite, adding an intriguing dimension to the classic cookie texture. This thoughtful combination creates a captivating contrast that keeps you reaching for more.
At the heart of these cookies lies a rich, buttery dough, a foundation of pure deliciousness. To elevate this classic base, we introduce a delicate hint of peppermint extract, a whisper of coolness that dances across your palate without being overpowering. It’s just enough to impart a refreshing “frostbitten” sensation, making these cookies truly unique and perfectly suited for the winter season. The final touch, a luscious chocolate coating, provides an additional layer of crunch with every bite, further enriching the flavor profile and adding an irresistible decadence.
While this recipe made its debut in 2018, it felt absolutely essential to bring it back into the spotlight. Though it hasn’t been long since its last feature, the sheer fabulousness and enduring appeal of these cookies demanded a swift return. The excitement these treats stirred up in my own kitchen was simply too great not to re-share, ensuring everyone has the chance to experience their magic. They are a timeless favorite, worthy of recurring appearances, especially as we approach the holiday season.

One of the many charms of this recipe is how quickly the cookie dough comes together. In just a few easy steps, you’ll have a beautifully textured dough ready for the next stage. While you can certainly bake these cookies immediately if time is of the essence, the true secret to achieving their optimal texture and depth of flavor lies in chilling the dough. Refrigerating the dough for at least an hour allows the ingredients to meld beautifully and the butter to firm up, resulting in a cookie that bakes more evenly, spreads less, and boasts a superior chewiness. For those with a flexible schedule, chilling the dough for a full day or even two can further enhance these qualities, making for an even more exquisite final product. Always choose the method that best fits your timing and preferences – these cookies are forgiving and delicious either way!
While Frostbite Cookies are undeniably delectable on their own, a luxurious dunk in melted almond bark or high-quality white chocolate elevates them to an extraordinary level. This simple step adds a delightful crisp snap when you take that first bite, followed by a creamy, rich coating that beautifully complements the cookie’s interior. It’s an enhancement that provides both a textural marvel and an added layer of sweet indulgence. This coating isn’t just about appearance; it’s about amplifying the entire tasting experience, making each cookie a mini masterpiece of flavor and texture.

During my most recent baking session, I decided to experiment by dipping half of the batch in rich, melted milk chocolate instead of the usual white chocolate or almond bark. The result was absolutely astounding! The combination of the subtly minty cookie with the deep, creamy notes of milk chocolate was a revelation, proving to be an equally amazing and perhaps even more addictive variation. This opens up a world of possibilities for customization, allowing you to tailor these cookies to your specific chocolate preferences or even offer a delightful assortment for guests.
If you’re on the hunt for a new, show-stopping cookie to add to your holiday baking repertoire, I wholeheartedly recommend these Frostbite Cookies. Their unique blend of flavors and textures, combined with their festive appeal, makes them an unforgettable treat. Please don’t hesitate to give them a try, and when you do, I would absolutely love to hear your thoughts and feedback! Your culinary adventures with these cookies are part of what makes sharing recipes so rewarding.
About The Recipe: The Sweet Story Behind Frostbite Cookies
Finding inspiration for new Christmas cookies is always an exciting quest, and for this particular masterpiece, I knew exactly where to turn. My incredibly talented friend, Kris, over at Big Rigs ‘n Lil’ Cookies, is a true baking wizard – her blog name even includes the word “cookies”! It was almost destined that her creations would provide the spark for my next baking adventure.
I didn’t have to search far at all. In fact, her renowned Frostbite Cookies recipe had been patiently waiting on one of my “must-make” Pinterest boards for far too long. The moment felt right, and I enthusiastically seized the opportunity to finally bring these delightful cookies to life in my own kitchen.

As often happens with cherished recipes, I made a few very minor adjustments to Kris’s original, delightful creation. My primary modification was to incorporate the peppermint extract directly into the cookie dough itself, rather than adding it to the almond bark coating as Kris had done. This subtle shift allows the refreshing mint flavor to permeate the entire cookie, creating a cohesive and beautifully integrated taste experience from the very first bite.
For those who might be hesitant about adding peppermint, please don’t let it deter you! As the recipe is written, it calls for just the lightest touch of peppermint flavor. The intention is not to create an intensely minty cookie, but rather to introduce a refreshing, barely-there coolness that elevates the overall profile. In fact, when I shared these cookies, not a single person strongly detected the peppermint enough to inquire about its presence. It simply adds that elusive “something special” – a subtle complexity that enhances the buttery sweetness and the rich texture without overpowering it.
However, if you consider yourself a true peppermint aficionado and crave a more pronounced minty kick, feel free to slightly increase the amount of extract. Exercise caution and add it gradually, as peppermint is one of those potent flavors that can easily transition from a delightful accent to an overwhelming presence if not carefully managed. A little goes a long way!
And here’s a crucial tip: whatever you do, do not skip the step of dipping these magnificent cookies in the melted almond bark or chocolate! While the cookies are certainly delicious on their own, that creamy, snapping coating truly provides the “je ne sais quoi” that a truly exceptional Christmas cookie should possess. It adds a professional finish, a delightful textural contrast, and another layer of flavor that transforms these already wonderful cookies into something truly fabulous and holiday-ready. Go ahead and commit to this final step – it makes all the difference!
