Beyond their immediate deliciousness, these mini loaves are incredibly practical. Any extras can be easily frozen, allowing you to savor a taste of homemade comfort weeks or even months down the line. Imagine pulling one out for an unexpected guest or a sudden craving! The distinctive round slices are wonderful enjoyed plain, letting the rich flavors of date and walnut shine, or they can be elevated with a smear of creamy butter or tangy cream cheese for an extra layer of indulgence.

A Culinary Heritage: Tracing the Origins of Date Nut Bread

Date and walnut breads, a staple in many households, appear to have historical roots in regions like Scotland, where similar tea breads, often incorporating dried fruits and served alongside tea, have long been cherished. Recipes like the traditional Irish Tea Brack share a similar ethos, blending fruit and tea into a comforting baked good.

However, this particular recipe holds a very special place in my heart, originating from my husband’s beloved Grandma Ruth. For as long as I can remember, each Christmas Eve has been marked by the arrival of her signature round loaf of date nut bread. The distinctive ribbed pattern, a tell-tale sign of its tin can baking, is as much a part of the tradition as the taste itself. It’s a culinary ritual I eagerly anticipate every single year, a true highlight of the holiday season.

This cherished family recipe embodies the very essence of why I began this blog: to preserve and share these precious culinary traditions. My goal is to ensure that these heartfelt recipes, passed down through generations, continue to delight and nourish for years to come. Knowing the deep connection this bread had to our family’s celebrations, I finally worked up the courage to ask Grandma Ruth for her secret recipe.

Her response was heartwarming and incredibly generous. Not only did she hand over the precise measurements and steps, but she also included a thoughtful gift: a special can opener designed to create smooth, rimless edges on cans. This ingenious tool makes the preparation process significantly easier, simplifying both the cleaning of the cans and the removal of the perfectly baked loaves. It took my son, Little Dude, and me a moment to grasp its unique operation, but we were thoroughly impressed by how cleanly and efficiently it lifted off the lids, setting us up for baking success.

Mastering the Art of Can Prep for Flawless Loaves

While Grandma Ruth’s special can opener is a fantastic convenience, it’s certainly not a strict requirement to embark on this delightful baking adventure. However, having at least five emptied 14.5 oz tin cans is essential for achieving the signature round shape. The process begins with careful preparation to ensure your loaves bake beautifully and release easily.

First, thoroughly remove both the metal lids and any paper wrappers from your chosen cans. To ensure they are impeccably clean and safe for baking, I highly recommend running them through the dishwasher. The high temperatures and powerful detergents provide a sanitizing clean. If a dishwasher isn’t available, a thorough wash by hand with hot, soapy water and a good scrub will also do the trick, ensuring all food residue is completely gone. Rinse them meticulously and allow them to dry fully before proceeding.

These prepared cans are not a one-time use item; you can reuse the same five cans over and over again for future baking projects, making this a sustainable and economical baking method. Alternatively, if you prefer, you can certainly start with a fresh set of cleaned cans each time. Once your cans are sparkling clean and dry, they are ready for the next crucial step: greasing and flouring, which will guarantee your date nut loaves slide out effortlessly after baking.

Savoring and Storing Your Delicious Date Nut Bread

Once your date nut loaves have cooled completely, they are ready to be enjoyed, shared, or stored. For optimal freshness and to maintain their delightful moisture, carefully wrap each cooled loaf in plastic wrap. This step is crucial whether you’re planning to keep them for yourself or present them as a thoughtful gift. I’ve personally experienced the joy these loaves bring; when I shared extra loaves with my brothers and dad, they were an absolute sensation, quickly becoming a much-requested treat.

These homemade round loaves of bread will remain wonderfully fresh and delicious at room temperature for approximately four days. To extend their shelf life significantly, you can freeze them for up to three months without compromising their quality. To freeze, ensure they are tightly wrapped in plastic wrap and then placed in an airtight freezer bag or container to prevent freezer burn. When you’re ready to enjoy, simply thaw them at room temperature or gently warm them in the oven.

For the best tasting experience, serve the bread at room temperature or slightly warmed. Its rich, wholesome flavor is captivating on its own, a testament to the simple yet perfect combination of dates and walnuts. However, for those who enjoy a little extra, a thin spread of butter melts beautifully into the warm crumb, adding a creamy, savory counterpoint to the sweetness. You might also consider a dollop of cream cheese for a delightful tang, or even a drizzle of honey for added sweetness.

Grandma Ruth, with her characteristic wit, playfully remarked that she just knew this recipe would find its way to social media if she ever shared it with me. And, of course, she was absolutely right! How could I possibly keep such a delightful and nostalgic recipe to myself? It’s not just the incredible taste; the very thought of these unique, can-baked loaves brings a genuine smile to my face every time. It’s a taste of home, a memory, and a tradition all rolled into one.

Beyond this one, the recipes Grandma Ruth has graciously shared with our family and that I’ve featured on the blog have consistently been among the most beloved and popular. Each one carries a piece of her warmth and culinary wisdom. I sincerely hope that you find as much joy and deliciousness in baking and savoring these Date Nut Loaves as we do!

Total: 55 mins

Equipment

  • 2 Quart Glass Batter Bowl With Lid
  • OXO Large Cookie Scoop

Ingredients

  • 1 cup chopped dates
  • 2 cups boiling water
  • 2 teaspoons baking soda
  • 2 Tablespoons butter
  • 2 Tablespoons vanilla extract
  • 1⅓ cups granulated sugar
  • ¾ teaspoon salt
  • 2 large eggs lightly beaten
  • 4 cups all purpose flour
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour 5 cleaned 15 oz cans. (Using a baking spray with flour is highly recommended for ease of release.)
  2. Place 1 cup chopped dates in a large mixing bowl. Add 2 cups boiling water and 2 teaspoons baking soda. Stir gently to combine.
  3. Stir in the 2 Tablespoons butter until it has completely melted into the date mixture. Allow this mixture to cool slightly before proceeding.
  4. Once slightly cooled, mix in the 2 Tablespoons vanilla extract, 1⅓ cups granulated sugar, ¾ teaspoon salt, and 2 large eggs (lightly beaten). Combine well.
  5. Gradually add the 4 cups all-purpose flour to the wet ingredients, stirring just until the flour is incorporated and no dry streaks remain. Be careful not to overmix, as this can lead to a tough loaf.
  6. Gently fold in the 1 cup chopped walnuts until evenly distributed throughout the batter.
  7. Evenly scoop the prepared batter into your greased and floured cans, filling each can about two-thirds full to allow for rising.
  8. Bake in the preheated oven for 35-40 minutes, or until a wooden toothpick inserted into the center of a loaf comes out clean.
  9. Allow the loaves to cool in their cans for about 5 minutes. Then, carefully run a knife around the edges of each loaf and remove them from the cans. Transfer them to a wire rack to cool completely before slicing or storing.

Notes

If using dates without dextrose, consider increasing the granulated sugar by 1/4 to 1/2 cup to balance the sweetness.
